      APPROVED PROCEDURES - VARIANCE FOLLOWED

Documentation for Sushi rice is being improperly recorded. Front cooler temperature recorded in sushi rice pH slot in all documentation. pH had not been taken at the time the rice was prepared on the day of the inspection. pH was only taken/recorded after asked about it. This leads to suspicions regarding "fudging numbers." Additionally, food manager was seen hitting the "calibrate" button on pH meter while in rice slurry, resulting in the rice always being exactly 4.0. Calibrate button should only be used during weekly calibration using proper buffer solutions. Rice was determined to be at acceptable pH, but record-keeping/understanding of the procedures was poor.

Correction: Properly take pH reading of sushi rice every day immediately after acidifying rice. Record pH on records before moving on to other food prep activities. Do not calibrate pH meter while in food items. This will result in inaccurate readings. Simply place meter in food and read the result. Noncomplaince with variances may result in the variance approval being voided by the Department if inability to
