     Cooked pizza sausage, sliced tomatoes, and corned beef in CH pizza prep unit are cold held at 55, 47, 55°F.

     Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items. All food items were just placed out and had been out on the prep line for about an hour. PIC placed all food items back in walk in cooler to get food items back into proper CH temperature range. PIC will investigate CH pizza prep unit and see if the temperature can be lowered on the unit so food pro

     The Propower dish machine is not utilizing the Low Temp - Pro Power chlorine sanitizer as instructed on the label. The concentration when tested is at 0 PPM.

     Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. PIC switched the dish sanitizing method over to their 4-compartment sink to sanitize dishes until they can fix the mechanical dish machine.
