      The Steramine quat sanitizer is not being used according to EPA registered label use instructions and is at 50 PPM. This was discussed and explained to PIC onsite that the container is 1 - 2 tabs per gallon of water, only 2 tabs were being used, and the volume of water in 3comp sink basin is greater than 1 gallon. an additional tab was added and concentration was at 200ppm. Do not use less than 3 tabs, and 4 is likely more appropriate for the volume of water.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
