FOOD CONTACT SURFACES - CLEANING FREQUENCY - SOIL ACCUMULATIONS

Ice machine not cleaned at a frequency to preclude accumulation of soil residue, specifically that top back corner where water pours into the cube tray. This area was visibly soiled.

Correction: Clean equipment at a frequency to preclude soil accumulation. You may want to consider hiring a professional to clean this equipment in its entirety on a regular basis. Have staff sanitize the area I talked about at least once a week. Kristen did wipe it down as best she could while I was there onsite.

FLOORS, WALLS AND CEILINGS - CLEANABILITY

Several areas of the floors, walls and ceilings in kitchen and back of house are deteriorated and not smooth and easily cleanable. This was an observation when new ownership took over and not much has been done to fix these issues to make them compliant. The biggest issue is the doorway that was created that is exposed brick and drywall.

Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable. By next year's inspection all of these issues need to be fixed.
