Informed owner and owner rearrange both coolers so raw meat and eggs are stored on bottom shelf.

      Correction: Reorganize food storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

      Observed containers of coleslaw in 2 door prep cooler in kitchen, container of gravy in 2 door cooler in kitchen, container of veggie beef soup in 2 door cooler kitchen and bag of prime rib in chest freezer are improperly date marked. Observed no date marking. Owner stated coleslaw was made on 1/11/25 and 1/12/25, gravy and veggie beef soup made 1/11/25 and prime rib was unknown. Owner date marked everything and discarded the prime rib.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
