Observed employee using 3 compartment sink to wash rinse and sanitize utensils. Had employee test 3 compartment sink and got 100ppm. Employee drained the sink and refilled it with sanitizer and got 200ppm. Employee then resanitized utensils that were in the sanitizer prior.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
