      RTE/TCS FOOD - PROPER DATE MARKING

      Observed container of chicken rice cassarole and container of pork sliders in walk in cooler are improperly date marked. Observed the containers date marks have not been updated upon thawing. Observed container of chicken rice cassarole date marked 10/14/25 and container of pork sliders date marked 2/26/25. Person In Charge informed they were frozen and place into walk in cooler to thaw on 1/7/26. Instructed and provided education to PIC on updating the date marking of food items that frozen then once they are place into a cooler to thaw to update with a new date mark. PIC stated they will update the date marking. PIC stated they will go through all the cassarole and pork sliders tonight and not carry any over.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.

      Observed no single-use toweling at employee handwashing sink for hand drying located near dishwasher. Also observed no handwashing sign posted at handwashing sink located near dishwasher and handwashing sink located in dinning area. Informed Person In Charge. PIC then got paper towel and handwashing signs.

      Correction: Provide single-use toweling or other approved devices at employee handwashing sink to facilitate proper handwashing.
