     PLUMBING - BACKFLOW PREVENTION - AIR GAP

     No air gap provided on the prep sink, main ice machine, and the ice machine that is part of the soda fountain. I explained to the PIC that the drainage pipes leading off of all three pieces of equipment need to terminate above the flood rim of their respective floor drains, creating a physical gap. The PIC indicated that they would provide an air gap for each piece of equipment.

     Correction: Provide an air gap on water supply side to protect water supply.

     No test kit was available for monitoring sanitizer concentration, as the PIC is not certain what kind of sanitizer they are going to be using. I explained to the PIC that they need to have an acceptable sanitizer and appropriate test strips available at the establishment before it begins operation, and the PIC indicated that they understood.

     Correction: Provide a test kit to allow accurate determination of the sanitization concentration.

     The prep cooler and the cooler section of the freezer/cooler were not equipped with an integral or permanently affixed temperature measuring device. I explained to the PIC that these coolers need to have an accurate permanently affixed temperature measuring device installed, and the PIC indicated that they would do so.

     A section of wall near the two-door standing freezer was rough to the touch. I explained to the PIC that this wall needs to be rendered smooth and easily cleanable, and the PIC indicated that they would make the wall smooth and easily cleanable.

     Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
