      CROSS CONTAMINATION

Food is not protected from cross contamination. In the prep table cooler #1, raw shell eggs are improperly stored above ready-to eat (RTE) foods.

Correction: During storage, preparation, holding, and display, keep raw animal foods separate from each other and from ready-to-eat foods so that cross contamination is prevented. Unwashed fruits and vegetables have to be separated from raw animal ready-to-eat foods and washed produce. If there is question of possible contamination, discard ready-to-eat foods.

      TOXICS - USE CONDITIONS

Quick San 10 quat sanitizer on the dispenser by the mop sink was used to fill spray bottles. The solution in the spray bottles is at 500 ppm. This chemical is not being used according to manufacturer`s use directions.

Correction: Change procedures and provide training to employees on proper use of toxic chemicals. Use toxic chemical according to manufacturer's use directions. Adjust the dispenser so chemical maintains 150-400 ppm quat. Until the dispenser is adjusted, either dilute the concentration of the quat sanitizer from the mop sink dispenser or use the quat sanitizer dispenser at the 3 compartment sink.
