    • Serious Priority 1

Keep all cold TCS foods at 41 degrees F or colder under mechanical refrigeration.

Measured food (yogurt-45, eggs-47) above 41 degrees inside customer display case. Instructed to remove plastic barrier to allow for air to flow more efficiently for cooling/cold holding. Food items were slid back towards the air vents as well. Operator stated they would call Quality to have machine serviced and turned down properly. Instructed to log temperatures every 30 minutes to verify if temperature is decreasing. If unit is unable to keep food at or below 41 degrees, it may need to be replaced. Adjust temperature properly so during defrost cycles the food stays at or below 41 degrees. Operator scheduled for Quality to come out following day, 05/14. Temperatures cooled down and were measured at 43F-44F after 2 hours from end of inspection.
