      Observed the low temperature chemical dishwasher to not be dispensing chlorine when the dishwasher went through an entire cycle. Dishwasher was run multiple times with the same result. Service call to be made to have dishwasher serviced. Upon completion of service, operator to submit follow up paperwork to inspector as verification that the dishwasher is up and running again. In the meantime, operator setup the three compartment sink immediately for wash, rinse and sanitizing of utensils, glassware etc. Quaternary ammonium sanitizer used and at 200 ppm.

      Observed staff member dilute sanitizer bucket concentration with water. Upon measuring sanitizer concentration, the bucket contained 0ppm. Manager instructed staff member to dump bucket and refill with proper sanitizer. Sanitizer measured 150ppm as required on the label. Retrain staff members to use the pre-mixed sanitizer and not dilute it, as it is no longer an effective sanitizer when diluted. Use all sanitizer chemicals according to instructions.
