      Observed salsas stored out of refrigeration on front line that were rendered non-TCS by acidification. Salsas are then returned to refrigeration for storage. This process requires a HACCP plan and variance or you can pursue one of the following options: 1. Pursue a HACCP plan to ensure proper pH testing and other food safety measured are taking place- then you can keep for longer than 7 days AND hold out of refrigeration indefinitely. 2. Avoid a HACCP plan and keep salsas refrigerated and stored for 7 days or less. 3. Avoid a HACCP plan, store for 7 days or less, and use TPHC to hold salsas out of refrigeration for 4 hours- then discard what is left.
