When asked about this process, Chef stated that they keep only a few foods out so they are ready to access for when an order comes in. Discussed with Chef that foods that are cold need to be kept cold at or below 41F at all times to be safe. Since there was a cooler directly across from the counter, it was recommended that they store the steaks and sausages in the cooler until an order comes in, or they could use Time as a Public Health Control (TPHC) plan if desired. A copy of TPHC plan was sent to operator via email for them to fill out if they chose to use TPHC. A discard time was set for 4 hours from opening, the time the steaks and sausages were set out.
