Priority 3
Floors, walls and/or ceiling surfaces are missing. Install smooth, durable, and easily cleanable floor, wall and ceiling surfaces.
There are no floor, wall or ceiling coverings provide in lower level areas that have food equipment, such as a plug in refrigerator and freezer, disposable cups and soda syrup racks. Floors are bare concrete, walls are unfinished brick or limestone and ceiling is bar rafters. Person In Charge reports that they are already planning to co-locate most of these items and provide required finishes in that area. Ice machines, plug in cooler, plug in freezers and soda syrup racks should be on quarry tile with integral cove, have nearby walls covered in FRP, and be under ceilings that are smooth, non-absorbent and easily cleanable. Dry storage goods and single service items (takeaway, disposable cups) must also be in spaces with coverings that are smooth, non-absorbent and easily cleanable - but the floors can be epoxy painted or non-quarry tile, and wall coverings do not necessarily have to be FRP. Make these changes before next routine inspection in 2024.

Priority 2
Have a test kit for the type of sanitizer used.
A drinking water test kit ranging from 0.0 to 1.2ppm was provided as the test kit for the chlorine dish machine. Dish machine's minimum sanitizer level is 50ppm chlorine according to data plate. This would be outside the range of the provided test kit, making it unusable for testing the dish machine. Provide a test kit for chlorine sanitizers that can test for 50ppm chlorine to ensure dish machine is properly sanitizing. Maintain on site at all times.

Consult with pest control company for professional advise.
