Be sure that these are cooled quickly from 135 to 70 in 2 hours and down to 41 in the 4 hours after that by cooling them in equipment that would handle the temperature and by making sure that ground beef is in a container that is less than 3" high. This was discussed and it was suggested that the sambusas be cooled in another cooler and the ground beef placed in the freezer first to quickly cool.
