      1. Cooked beef was observed stored in greater than 4 inches depth in a plastic strainer in the walk-in cooler. At 11:45 am the center of the beef was 112F and at 1:25 pm the center of the beef was 77F. 2. Fish cakes that were made this morning at 11:30 am were 107F at 1:15 pm were observed in stored in greater than 4 inches depth in a covered plastic container in the kitchen 2 door upright cooler.
