      Sanitization rinse in high-temperature dishmachine does not register a minimum 71°C (160°F) on the irreversible temperature indicator. The dishwasher was ran several times and the final rinse cycle did not get above 151°F. It was also observed that temperatures below 160°F are being recorded on the high temperature dish log.

      Correction: Adjust exposure time to hot water sanitization rinse so utensils reach a minimum surface temperature of 160°F. Use warewashing sink until the high temp dishwasher is properly working.
