      Improper cooling methods are observed for both chicken and rice that are being cooked then cooled. Cooked rice was observed in a bowl sitting out on top of a table in the kitchen at 100°F. The rice was cooked about an hour ago. A bag of chicken cooked a half hour ago was observed to be cooling in a tightly sealed ziplock bag in the 3 door kitchen prep cooler.

      Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. The bowl of rice was immediately moved into the 3 door kitchen prep cooler and the ziplock bag of cooked chicken was opened in the cooler to allow for adequate cooling.
