     Homemade salsas, tomatoes and other ready to eat refrigerated food items in the prep cooler are being cold held at 47-48°F.

     Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items. After discussion with employees, the food items were put into the prep cooler a half hour ago so the food items requiring refrigeration were moved into the 2 door cooler that was maintaining temperature.

     Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Store metal spatula in a container or in a sanitary manner to prevent cross contamination.
