Make sure all Multi-use food contact surfaces, such as glasses, utensils, dishes, pots and pans are washed, rinsed and sanitized for different guests. By providing only dishsoap and no dishrack, this indicates guests will wash dishes and put them back in the cupboard Unsanitized. To ensure proper sanitization you could provide a dish bin for dirty dishes in the units or other procedure to make sure dishes do not go back into the cupboard before sanitizing.
