     PRIORITY: Five Star San acid sanitizer was being used in the rooftop bar. Operator did not have test strips and was not knowledgeable on how to test the sanitizer concentration. Operator also did not know what were the safe sanitizer ranges for food contact surfaces. Operator agreed on using quat sanitizer until they contact the Five Star San supplier to request test strips and safe food contact surfaces concentration ranges.

     Correction: Sanitizer shall meet the requirements under 40 CFR 180.940 or 40 CFR 180.2020. If establishment wants to keep using Five Star San, then it is required to obtain test strips to measure the sanitizer concentration/pH. The sanitizer concentration needs to be on a safe range for food contact surfaces.
