PRIORITY - Potato wedges in the warmer is hot held at 131-134°F in the hot logix reach in warmer. The potato wedges were moved into the hot wells for service and after a few about 5 or less minutes, the temps increased to 136 and 148. Inspector instructed employee stir up the food item to evenly distribute the heat.
Correction: Maintain time/temperature control for safety food at or above 135°F. Discard unsafe food items.
