7. New Business (Review/Action)
● Program Updates
o The two LTE (Limited Term Employee cooks), Vilas Patel and Quinn Herschfeld, are trained or
training under Nelvie.
o Candy, our Meal Site Manager, has been out for a little more than a week. Jenny and Robin and
Autumn have stepped in and served the meals as a carryout option and brought the Meals on
Wheels up to the sites.
o During the Nutritional Directors Conference Nicki learned that the Dietary Guidelines were updated.
The Nutritional Guidelines now required 30 grams of protein, less than 10 grams of sugar, less fats.
Beans and lentils are no longer required to have on the menu. Our Nutritionist, Teresa Mertens,
said we should be eating the rainbow, seasonal fruits and vegetables. We should be serving 3 ½
cups of colorful vegetables or fruits instead of milk serve yogurt, cheese or fortified soy beverage.
Congregate sites offer water, whole grains, focus on less sugars and use colors in meal planning.
We send string cheese, yogurts, and low sugar fruits with frozen meals.
● Nutritional Statistics
o Nicki reviewed the handout “Health and Human Services Statistics” noting that almost every area is
up compared to 2nd quarter of 2025.
● Six-week Rotational Menu
o The 6-week Spring/Summer menu is included in the handout in the agenda packet. So far, the
menus are doing good. Especially in the congregate setting. Meals on Wheels participants have
questions and are worried about what the names mean and what is in the food. For example, Sweet
& Savory Meatballs. The menu comes from a GWAAR representative and the Trustwell database.
Options were presented by members that maybe there can be education that gives a definition of
what a meal is, such as a, “Did You Know”, or a listing of what is in the food. Another option is
listing the item as what it is versus what is in it. For example, listing it as brownies versus sweet
potato brownies. There have been a lot of complaints about not having dessert. It’s also hard for our
baker, Kathy, to adapt to using less sugar. The board members stated that they could see a need
for desserts. The needs of the participants might be a factor, as in, some participants need the extra
calories. Nicki stated that we had some flexibility to add desserts.
● Office on Aging/Bureau of Aging and Disability Resources Elder Nutrition Program Manager,
Program Analyst Visit
o Sara, from Madison, will join us on Wednesday. This will be her first time at our ADRC.
● Annual Nutrition Surveys Starting August 3rd
o A handout “Tell Us What You Think…” for the Dining and Home Delivered Meals survey is included
in the agenda packet. Last year’s survey we asked more food specific questions and what
participants would like in the menus. We will release the survey on August 3rd to both the Meals on
Wheels and congregate participants. They can access the survey online as well as a QR code. The
survey will be active for the whole month.
● Nutrition Programs Fall Staff Training-October 13th @ FVTC
o The Kitchen team will be attending a training at Fox Valley Tech on October 13th. Nicki is on the
planning committee. Some of the subjects they will cover is; the APS (Adult Protective Services)
and the role they play in the Nutrition Program. Red Flag Training for Congregate and Meals on
Wheels, Dealing with difficult consumers, Dietary guidelines. We could invite Meals on Wheels
drivers as well. Board members as well as drivers, Cathy Keller and Louise Wenzel stated they
would like to attend or have a training here. Volunteer training is required every 3 years.
